Spiced Mackerel Pâté
A blue fish (mackerel) pâté at a picnic under the blue sky could certainly make for a nice way to welcome back Spring. The creamy texture and the softly spicy aroma are appealing, as are its freshness and exquisite flavor. You will no doubt have plenty of ideas as to the company, the moment and the location.

Chinese crepe with mackerel pâté with red pepper
Recipe for 4 to 6 childrenHeat 25 ml sesame oil over a high heat. When it's smoking, add 10g chopped garlic and 50g finely sliced mushrooms. Let them cook for 1 minute without stirring. Then, stir them to cook the remaining mushrooms. Drain in a sieve (save the liquid for a soup). Heat another 25g of sesame oil, doing the same with 75g of onion and 150g of bean sprouts. When everything is well drained and cold, mix it with the pâté (2 tins). Fill the pancakes and roll them up (use frozen Chinese pancake batter). Fry in normal oil at 180ºC and drain.
GOURMET ADULTS
Mackerel pâté with red pepper, white beans and basil, pepperoncino.
Recipe for 4 to 6 adults
Drain 1 tin of white beans, rinse and simmer them in 100 ml of chicken soup. Pour into a dish with two chopped red chillies (pepperoncino), 50g fresh basil and 20g olive oil. Serve with the pâté (2 tins).
